Episode 2 - Macaroni, bulk meals and honest hospitality // Roxi

In this episode I have lots of fun chatting with my long time best friend - Roxi deVos. She is married to her high-school sweetheart Josh and they have 2 little boys aged 4 and 2. They have a busy family life with Josh working full time while studying in his 'free time' and Rox shares some tips for still squeezing in quality time as a family. She also shares tips for bulk cooking meals, a great website for getting only the recipe when browsing online, an honest perspective on hospitality and so many other tips!

Family Activities:

- Playing 'I Spy' while waiting for others to finish dinner (including shapes, not just colours)

- Dad and kids walk after dinner

- Outings: walk around Swan River in Burswood


Recipes:

- Macaroni (bulked with cabbage, mushroom and zucchini)

- Tacos (also bulked with veg)

- Lemongrass pulled pork

- Vanilla slice (forgot to ask her about it in the episode, but Rox was kind enough to give it to us anyways!)


Kitchen tips:

- Holiday meals: bulk meal prep beforehand and freeze for easy meals while camping

- Stop throwing out leftover dips that go bad in the fridge. Make your own using sour cream and spices (make only as much as you need) Not really a recipe, but Roxi uses onion powder, paprika, Italian herbs and a Cajun spice mix

- Add sour cream to spicy meals for kids

- Always have a sharp knife

- Use a dutch-style cheese knife


Hospitality:

- Get out of your comfort zone and just do it. The hardest part is the thinking about it. It's never as hard as you think it's going to be.

- It helps if your husband and kids love to chat 😉

- If hosting on Sundays, it's a good motivator for getting all the housework done 😉

- Remember that the state of your attitude speaks much louder than the state of your house


Cleaning & washing:

- Do a load of washing every day to prevent pile-up

- Have Saturday as a buffer day for the things that got missed during the week

- Clean Venetian blinds by closing and wiping with a damp cloth


Organisation:

- Recipes: use notes app on phone, can have photos, add notes below recipe when changing something.

- Use adhesive Velcro to keep things in place eg. Cables

- Try a whiteboard for family and kids schedule/routines, ongoing shopping lists etc.

- Meal plan and shop fortnightly to limit impulsive/opportunistic shopping
